Hi,
I'm looking for a physics engine for in my game engine, and I am thinking about Bullet or PhysX with FleX. PhysX and FleX support (water) particles and wheels. But does bullet too?
And how about softbody's?

You could try installing cmake-gui, and then create a project using that. It allows you to select 64 bit too.
